They say the world is your oyster but if you’re looking for a world of oysters then we have news for you! Byron Bay Oyster Bar & Restaurant is making waves as it prepares to open its doors on Tuesday October 15 at Hotel Marvell. With a vision inspired by the chic oyster bars of New York, this new dining destination promises to deliver a laid-back yet luxurious seafood experience for locals and visitors alike.

The team behind it are serious about oysters and serious about freshness – so much so that they’ve installed a massive land-based oyster tank that can hold up to 500 dozen oysters at a time! 

Hotel Marvell general manager James Pearce said, “Our state-of-the-art oyster tank uses carefully filtered water collected on a king tide from nearby Brunswick Heads to naturally cleanse the oysters of any impurities. It also regenerates them to the pristine condition that’s usually reserved for oysters consumed straight from the water at a farm.”

Watch your oysters shucked to order at a live shucking station, then tuck into them au naturale or dress them up with mignonette, bloody mary or verjus with pomegranate. There will also be a hot selection on offer including Kilpatrick, mornay, baked miso, Rockefeller and lemon and herb butter. Oyster lovers can look forward to Oyster Hour on Tuesdays through Saturdays from 5:00–6:00 pm. 

Beyond oysters, the menu shines a spotlight on quality produce, featuring a raw bar, starters like lobster rolls and barbecue prawns, and mains including Fremantle octopus, lobster mornay and a whole fried market fish.

With a lush indoor-outdoor space and a delectable selection of seafood from Australia and New Zealand, Byron Bay Oyster Bar & Seafood Restaurant is set to become the go-to spot for a leisurely meal, a quick oyster fix or a stylish rendezvous.
